Grilled Shad

3 pounds

Shad, whole, dressed

Combine lemon juice, olive oil, garlic salt, oregano and pepper. Make 4 to 5 shallow slits with a sharp knife on each side of the fish. Brush sauce on both the inside and outside of the fish. Place fish in a well-greased, hinged wire grill rack. If you do not have a rack fish can be put on foil on the grill. Cook about 4 inches from moderately hot coals or heat for 5 to 8 minutes. Baste with sauce, turn, and cook for an additional 5 to 8 minutes or until fish begins to flake easily when tested with a fork.
